Ceylon cinnamon comes from the real cinnamon tree. It is rich in essential oils and has a slightly tart taste than the cheaper cassia cinnamon that is often used.
The real Ceylon cinnamon is said to have some positive characteristics that cassia cinnamon does not have.
The main difference is that Ceylon cinnamon does not contain coumarin, while Cassia cinnamon has a relatively high coumarin content. Since coumarin is classified as unhealthy, frequent consumption of Cassia cinnamon is not recommended.
